Rocky road fudge
Rocky road fudge is a delicious mixture of smooth chocolate fudge filled with biscuit pieces and marshmallow (and anything else you like!)
Rocky road fudge is a delicious easy homemade treat. It takes our favourite chocolate fudge recipe to the next level with the addition of crushed biscuits and soft marshmallow.
It’s a firm family favourite because it combines two of my kids favourite treats – chocolate fudge and rocky road! Best of all, it’s so quick to make with only three ingredients (plus whatever rocky road pieces you like.)
It’s a no boil fudge so you don’t need a cooking thermometer or to boil it for a certain length of time. Simply melt everything together and leave it to set. It couldn’t be easier.
In fact, the hardest part for us was waiting a few hours for it to set before we could eat it!
How can kids help to make rocky road fudge?
Homemade fudge using the no-boil method is really simple, so it’s a great treat for kids to help make. Once your kids have measured out and broken up the chocolate they can melt it together with the rest of the ingredients.
Melting and mixing it all together isn’t a great job for very young children but older children who can be trusted to be safe around a hot pan can help with this job.
If you do have younger children, get them to help prepare the rocky road pieces instead. They’ll have fun measuring out the marshmallows and crushing the biscuits.
Can you use a microwave?
Yes. I like melting everything together gently on a double boiler but if you prefer you can use a microwave.
Simply pop everything into a microwavable bowl and heat it at 80% power in 30 second intervals. Stir it in between each microwave blast and stop when everything has melted and come together.

What else can you add to the rocky road fudge?
Different people add different things to their rocky road and this fudge is exactly the same. For some it’s not a rocky road without nuts so you could throw in some peanuts, chopped hazelnuts or walnuts.
Dried fruit like raisins, sultanas, cranberries or chopped apricots would also work well.
How long does the fudge keep?
This fudge will keep for a week or two in an airtight container, which makes it perfect for homemade gifts for friends and family.
If you want to keep the fudge for longer, you can freeze it for a few months. Simply wrap it well in cling film, and pop it in a freezer bag or airtight container.

Ingredients
500g milk chocolate
397g tin condensed milk
½ teaspoon vanilla extract
125g plain biscuits (eg Digestives or Graham Crackers)
50g mini marshmallows
How to make rocky road fudge
Line an 8 inch (20cm) square baking tin with baking or parchment paper. We find it easier to cut a long strip and place it in the tin one way then do the same in the other direction. Leave a bit of an overhang to help you remove the fudge from the tin later.
Melt the fudge ingredients together
Start by getting your kids to weigh the chocolate out, break it up and add it to a heatproof bowl.
Pour in the condensed milk
Finally, get your kids to add the vanilla extract. If you have young children you can hold the measuring spoon while your kids pour in the vanilla or vice versa.
Put the bowl over a pan of simmering water (a double boiler).
Melt everything together, stirring all the time until it comes together in a nice smooth consistency.
Prepare the rocky road filling
While the fudge is melting, get your kids to measure out the biscuits and break them into small pieces. We just broke them with our hands but you can bash them with the end of a rolling pin if you prefer.
Measure out the mini marshmallows
Make the rocky road fudge
Keep some of the marshmallows and crushed biscuits back to add to the top of the fudge (or if you have spare ones, you can just add extra.
Remove the fudge from the heat and add the crushed biscuits. Stir it all in so they are mixed through. Leave the fudge to cool for 5-10 minutes then add the mini marshmallows. (If you add them straight away, they’re likely to melt). Stir them through.
Pour the rocky road fudge into your prepared baking tin. Smooth it down with a spatula or the back of a spoon, being sure to push it into the corners.
Get your kids to sprinkle the remaining biscuits / marshmallows on top. Press them in gently so they stick to the fudge.
Leave the rocky road fudge to set.
Cover your fudge in cling film/ glad wrap and leave it to set. Once it has cooled down a bit, pop it in the fridge for a few hours to set completely.
Once it has firmed up, cut it into small pieces with a sharp knife (this is a job for grown ups).
Serve and enjoy!
