Mint chocolate fudge
Mint chocolate fudge is a delicious, homemade treat that is so simple to make even kids and beginner bakers can do it.
Mint chocolate fudge is a deliciously smooth fudge with the best flavour combination – mint and chocolate. We know the flavours go well together, it’s my kid’s favourite icecream, so we thought we’d make them into an easy fudge based on our simple condensed milk fudge recipe.
It’s a no boil fudge so you don’t need a cooking thermometer or to boil it for a certain length of time. Simply melt everything together and leave it to set. It really couldn’t be easier.
In fact, the hardest part for us was waiting a few hours for it to set before we could eat it!
How can kids help to make mint chocolate fudge?
Homemade fudge using the no-boil method is really simple, so it’s a great treat for kids to help make. If you’ve got more than one child that wants to help this recipe is great as there are two halves to it. And once you’ve made each half of the fudge (the mint half and the chocolate half), you can get your kids to pour them in the tin at the same time to make a lovely swirl.
Once your kids have measured out and broken up the chocolate they can melt it together with the rest of the ingredients.
Melting and mixing it all together isn’t a great job for very young children but older children who can be trusted to be safe around a hot pan can help with this job. If you’re using a microwave to melt the chocolate, that’s a better job to give to younger children.
Can you use a microwave?
Yes. I like melting everything together gently on a double boiler but if you prefer you can use a microwave. We only have one heatproof bowl so actually made half of this fudge in the microwave and the other half using a double boiler so we could do it them at the same time.
Simply pop everything into a microwavable bowl and heat it at 80% in 30 second intervals. Stir it in between each microwave blast and stop when everything has melted and come together.

How long does the fudge keep?
This fudge will keep for a week or two in an airtight container, which makes it perfect for homemade gifts for friends and family.
If you want to keep the fudge for longer, you can freeze it for a few months. Simply wrap it well in cling film, and pop it in a freezer bag or airtight container.

Ingredients
250g white chocolate
250g milk chocolate
397g tin condensed milk
1 tsp mint extract
a few drops of green food colour
Mint chocolate to decorate
How to make mint chocolate fudge
Line an 8 inch (20cm) square baking tin with baking or parchment paper. We find it easier to cut a long strip and place it in the tin one way then do the same in the other direction. Leave a bit of an overhang to help you remove the fudge from the tin later.
Melt the fudge ingredients together
Start by getting your kids to weigh the two chocolates out then break them into two different heatproof bowls.
Add half the condensed milk into one bowl of chocolate and half into the other. We found the easiest way of doing this was to put one bowl of chocolate on our scales, reset it to zero, then added approx 200g of condensed milk. The rest we just poured into the other bowl.
Put each bowl over a pan of simmering water (a double boiler). If you only have one heatproof bowl, do one at a time or you could do the other at the same time in the microwave.
Melt everything together, stirring all the time until it comes together in a nice smooth consistency.
Once the white chocolate half has melted, get your kids to add a few drops of green food colouring and the teaspoon of mint extract. You might need to hold the spoon while they pour in the mint or vice versa if you have young children. Stir it in so it is well mixed.
Make the mint chocolate fudge
You can either make the fudge into layers or swirl the two halves of fudge together. If you want to make a layered fudge, simply get your kids to pour one half of the fudge into your prepared baking tin and smooth it down then add the other layer of fudge.
To make a swirled fudge like ours, you need to add both of the fudges at the same time or add a bit of one, then a bit of the other, etc until all the fudge has been added. Use the back of a spoon to give it some additional swirls in the tin.
Break up some mint chocolates and get your kids to sprinkle them on top. Press them down gently with your hands to make sure they’ve stuck.
Leave the fudge to set
Cover your fudge in cling film/ glad wrap and leave it to set. Once it has cooled down a bit, pop it in the fridge for a few hours to set completely.
Once it has firmed up, cut it into small pieces with a sharp knife (this is a job for grown ups). We got 25 pieces from ours but you can cut less or more depending on how large you want the pieces to be.
