Caramel stuffed cookies take our favourite cripsy on the outside, chewy on the inside chocolate chip cookie and adds a delicious soft oozy caramel centre.

How can kids help to make Caramel stuffed cookies?
We’ve used our favourite really easy cookie recipe for kids so they can enjoy making these from scratch.
The basic cookie recipe just needs a few ingredients measured out and mixed together. There’s really nothing in the recipe that even young children can’t do.
The hardest and messiest part of this bake is getting to stuff the cookies. We used some Carnation caramel from a tin we had left over from our banoffee cupcakes, which is still quite soft so had to spoon it in the middle of the cookie before forming the cookies around it. If your kids don’t like getting their hands messy, then this step probably isn’t for then, although they could spoon the caramel in while you form the cookie.
What can I use instead of caramel?
If you don’t have a tin of caramel you could use something like a Werthers Soft caramel, Kraft Caramels, Rolos or any other caramel you find in the supermarket.
How long do caramel cookies keep?
The soft centre will be at its softest and ooziest if you eat these while they’re still a little warm from the oven, but the cookies themselves will keep for a few days in an air tight container.
You can freeze the cookies for a few months if you wrap them well in cling film/glad wrap and pop them in a freezer bag. Defrost them fully and if you like, warm them a little in the oven again before you serve them.

Ingredients
100g (1/2 cup) butter
150g (2/3 cup) soft brown sugar
1 egg
½ tsp vanilla extract
200g (1 1/4 cups) self raising flour
100g (1/2 cup) chocolate chips
12 teaspoons of caramel (we used a tin of Carnation caramel)
How to make Caramel stuffed cookies
Preheat your oven to 180C / 170C Fan / 350F and line 2-3 baking trays with baking or parchment paper.
Make the cookie dough
Start by getting your kids to measure out the butter and sugar and add them both to a large mixing bowl or free-standing mixer.
If your butter isn’t soft (we never remember to take ours out of the fridge beforehand), pop it in the microwave for 10 seconds or so. You don’t want to melt it, just do it for long enough for it to soften a touch so it’s easier to mix.
Using the k-paddle of your free-standing mixer, a hand held mixer or wooden spoons, cream the butter and sugar together for a few minutes until it looks light and fluffy.
Next, get your kids to crack an egg into a small bowl (to make sure no rogue shell goes in), then add it to your mixing bowl. If you do get some shell in, use a larger piece of shell to fish it out as it will stick to that more easily than it will your finger.
Add the vanilla extract. If you kids are still quite young, you might need to hold the measuring spoon level while your kids pour in the vanilla or vice versa.
Mix everything together.
Now get your kids to measure out the flour, add it to your bowl and give it a good mix so it is well incorporated.
Finally, pour the chocolate chips in and using a spatula or wooden spoon, mix them in thoroughly.
Stuff the caramel cookies
Scoop out a dollop of cookie mixture and flatten out the centre of it in your hand. Spoon a little dollop of caramel into the centre, then wrap the dough around it to form a ball again with your hands. If you need to add, a little more dough on top of the caramel so it’s well covered.
Pop it on a baking tray and repeat with the others leaving room between each cookie for them to spread.
Making the cookies can get a bit messy so if you’re kids don’t like getting their hands too messy, perhaps get them just to add the caramel while you form the cookies with your hands.
Chill the cookies in the fridge for 20-30 minutes before you bake them to stop them spreading too much in the oven.
Bake the cookies
Bake the cookies for around 12-15 minutes. They’re ready when they’ve turned a nice golden brown colour.
Remove them from the oven and leave them to cool on the baking tray for a few minutes before putting them on a wire rack to cool completely.
Serve and enjoy!
