Vanilla fudge cookies are a delicious cookie full of chunks of fudge. They’re an easy bake that kids will enjoy making.
We love baking cookies – regular chocolate chip cookies are our normal go to cookie. These cookies take inspiration from them but rather than chocolate chips we’ve added fudge chunks. The fudge gives them an indulgent, caramelly flavour. They’re certainly very tasty and won’t last long in your cookie jar.
How can kids help to make fudge cookies?
All cookies are great for aspiring bakers as they’re generally really easy to make.
As with most bakes, kids can measure and mix everything together to make the cookie dough. They can then help to form the balls of cookie dough to make the cookies. This is much easier and quicker than biscuits that involve rolling and cutting.
How long do fudge cookies keep?
These cookies will keep for up to a week in an air tight container.
You can also freeze the cookie dough for up to three months. To do this simply shape them into balls, freeze them overnight on a baking tray then pop them into a freezer bag. You can then take them out and bake them, although you’ll need to do it for longer than suggested below.

Ingredients
150g (2/3 cup) butter
175g (1 cup) soft brown sugar
1 egg
1 tsp vanilla extract
225g (1 ¼ cup) plain / all-purpose flour
1 tsp baking powder
100g (½ cup) fudge chunks
How to make fudge cookies
Preheat your oven to 180C / 170C Fan / 350F and line two baking trays with baking or parchment paper.
Cream the butter and sugar together
Get your kids to measure out the butter and sugar and put them in a free-standing mixer or large mixing bowl. If the butter isn’t soft (we always forget to take it out the fridge beforehand), chop it it into a few pieces then pop it in the microwave for a few seconds. Don’t do it long enough for it to melt.
Cream the butter and sugar together with the k-paddle of your free-standing mixer, a hand held mixer or some wooden spoons. Cream it for a minute or so until it is light and fluffy. You may need to scrape down the sides of your bowl with a spatula to ensure everything is mixed in.
Add the egg and vanilla
Crack the egg into a small bowl then put that into your mixing bowl. You could add it straight in but we tend to do it in a separate bowl first in case any rogue shell goes in. If it does, simply fish it out with a larger piece of shell – it will stick to that better than your finger.
Get your kids to add the vanilla. You may need to hold the measuring spoon while your kids pour in the vanilla or vice versa. Older children should be able to do this themselves.
Mix the eggs and vanilla into the creamed sugar / butter mixture.
Add the flour and baking powder and fudge.
Measure in the flour and baking powder. Make sure your kids use their finger to level the tea spoon so you add just the right amount of baking powder.
Mix everything in until it is well combined.
Finally, pour in the fudge pieces, then using a spatula or wooden spoon, mix them in.
Bake the fudge cookies.
Get your kids to take small pieces of cookie dough and gently roll them into balls. Lay them on your prepared baking tray leaving enough space between them so they’ve got room to spread in the oven.
Once you’ve rolled out all the cookies, pop your baking trays in the fridge for a least 15 minutes, to stop them spreading too much in the oven.
Bake the fudge cookies in the oven for 10-12 minutes. They’re ready when they have spread and hardened a little and look nice and golden at the edges.
Remove them from the oven and leave them to cool on the baking tray. They’ll continue to harder as they cool.
Serve and enjoy.
