Caramel banana bread
Caramel banana bread takes a regular banana bread to the next level with some delicious caramel swirled through it. And with everything mixed together in one bowl, it couldn’t be easier, making it perfect for kids.
Caramel banana bread is a delicious twist on regular banana bread, with some beautiful Carnation caramel swirled through it.
We love making banana bread but sometimes it’s nice to mix it up and try a variation on our usual recipe. This caramel banana bread is a really easy twist of a regular loaf with just some caramel added to the batter. It’s one extra ingredients one extra step but a delicious variation of our regular bake.
How can kids help to make the caramel banana bread?
Banana bread is such an easy bake for kids to make with everything just mixed together in one bowl and this caramel version is no different.
Kids will be able to measure and mix everything together as well as mash up the bananas and swirl in the caramel.
My kids also enjoyed being in charge of preparing the topping in the tin (adding banana slices and caramel). It’s option, but a simple way of jazzing up the presentation.
What can I use if I don’t have any self raising flour?
If you don’t have any self raising flour you can swap it for an equal amount of plain or all purpose flour and add 1 ½ tea spoons of baking powder.
How do you store the caramel banana bread?
Caramel banana bread will keep in an airtight container at room temperature for a few days. There’s no need to refrigerate it unless you live in a very hot climate.
If you want to keep your banana bread for longer, wrap it in cling film and put it in the freezer. It will freeze for up to a few months.

Ingredients
100g (½ cup) butter, softened
75g (1/3 cup) caster sugar
250g (1 ½ cups) self raising flour*
1/2 teaspoon vanilla extract
2 eggs
3 bananas
1 tsp baking powder
1 tsp bicarbonate of soda
397g tin of caramel (we used Carnation)
*If you don’t have self raising flour, swap it for an equal amount of plain/all-purpose flour and add 1 ½ tsp of baking powder.
How to make caramel banana bread
Preheat your oven to 180C / 160C Fan / 350F and grease and line a 2 lb loaf tin with baking or greaseproof paper.
Prepare the bananas
Get your kids to peel and chop two of the bananas then using a fork, mash them up. Add them to a large mixing bowl or free-standing mixer.
Add everything to a mixing bowl
Get your kids to measure the butter, sugar and flour and add them to your mixing bowl.
Add the vanilla extract. If your kids are younger you might need to hold the tea spoon while they add the vanilla or vice versa. Older children with a steadier hand may be able to do it themselves.
Add the baking powder and bicarbonate of soda. When your kids are measuring it in make sure they use their finger to level the tea spoon so you get just the right amount.
Finally, get your kids to crack the eggs into a small bowl before adding it to your mixing bowl. We never add the eggs straight in just in case any shell goes in. If it does, simply fish it out with a larger piece of shell – it will stick to that much more easily than your finger.
Mix everything together with the k-paddle of your free-standing mixer, a hand held mixer or just some wooden spoons until you have a nice smooth batter. You might need to scrape down the sides of you mixing bowl with a spatula a few times to make sure it’s all mixed in.
Add the caramel
Get your kids to pour/spoon the caramel into your mixing bowl (keeping a couple of big spoonfuls back for the topping), and using a spatula or spoon stir it through your banana bread batter.
It doesn’t need to be thoroughly mixed in, it’s quite nice to have some swirls of caramel running your your loaf.
Bake the caramel banana loaf
If you want to have the banana caramel topping get your kids to spread the last bit of caramel into the bottom of the loaf tin then slice up the remaining banana and lay it on top.
Pour the batter into the loaf tin and spread it into each corner with a spatula or the back of a spoon.
Bake the caramel banana bread for 50-60 minutes It’s ready when a skewer or sharp knife inserted into the middle comes out clean.
If you find the top of your loaf is browning too much before the banana bread is ready, cover it in foil while it finishes baking.
Remove the caramel banana bread from the oven and leave it to cool in the tin.
Once it has cooled, turn it out of the tin, serve and enjoy!
