Strawberry cookies are a delicious, light and fruity bake. Made with fresh strawberries they sing of real strawberry flavour and are the perfect bake for the summer.
How can kids help make strawberry cookies?
Theses strawberry cookies are based on our basic cookie recipe so are a great, easy bake for kids.
Once you’ve measured and mixed everything together and added the strawberries it’s a simple case or dolloping out the cookie dough onto a baking tray. There’s no need to roll or cut out biscuit shapes like you do with some bakes which is what I love about making cookies.
These cookies are also really quick to make (20 minutes plus 10 minutes baking) which is perfect for kids with short attention spans.

How do you stop cookies spreading in the oven?
Cookies can spread and become a bit thin in the oven. To stop that from happening we always use butter rather than margarine or baking spread. Also remember to chill your cookies in the fridge for at least 15 minutes before you bake them.
Do you need to macerate the strawberries?
Macerating the strawberries (soaking them in liquid), before you add them to the cookie dough will bring out their flavour. It’s especially important to do it if your strawberries aren’t as sweet or ripe as you would like them to be.
I think it helps bring a lot of flavour to your strawberries but you could skip this step if you have very ripe strawberries that are already full of flavour.

Ingredients
For the strawberries
140g strawberries
1 tbsp lemon juice
1 tbsp caster sugar
For the cookies
100g (½ cup) butter
100g (½ cup) caster sugar
50g (¼ cup) soft brown sugar
1 egg
½ tsp vanilla extract
250g (1 ½ cups) plain / all-purpose flour
½ tsp baking powder
How to make strawberry cookies
Preheat your oven to 180C / 160C Fan / 350F and line 2 baking trays with baking or greaseproof paper.
Macerate the strawberries
Start by getting your kids to cut up the strawberries into small pieces. You might find it easier to cut the strawberries into slices first and then let your kids chop them into smaller pieces from there. Younger children in particular, will find it easier (and safer) to cut something that has a flat surface.
Put the chopped strawberries into a small bowl and get your kids to measure in the lemon juice and caster sugar. Stir it all in then set it aside for ten minutes.
Make the cookie dough
Beat the sugars and butter together
Measure both the sugars and the butter out and put them in a large mixing bowl or free-standing mixer.
Beat them together with the k-paddle of your free-standing mixer, a hand held mixer or wooden spoons until they are light and fluffy.
Add the egg and vanilla
Get your kids to crack the egg into a small bowl then add it to your mixing bowl. This is always a safer way of doing it in case any shell goes in. If it does, simply fish it out with a larger piece of shell (it will stick much more easily to that than your finger).
Measure the vanilla then add it to your mixing bowl. Older children can probably do this themselves but younger children might need you to hold the tea-spoon while they pour or vice versa.
Mix the egg and vanilla in until they are well combined.
Add the dry ingredients
Measure out the flour and baking powder and add them to your mixing bowl. Make sure your kids use their finger to level the ½ tea spoon before you add it so you get just the right amount.
Mix the flour in until it has just come together.
Add the strawberries
Strain the strawberries and dab them with some kitchen roll to remove any excess liquid. Add them to your cookie dough and mix them in with a spatula or wooden spoon.
Make the strawberry cookies
Get your kids to dollop a spoon of cookie dough on to your prepared baking trays. Shape them with your hands so you end up with neat balls but don’t flatten them. We got 12 cookies but you can make more/less if you make them smaller/larger.
Chill the baking trays for 15 minutes before you put them in the oven.
Bake the cookies
Bake the cookies in the oven for 10-11 minutes. They’re ready when they’ve turned a slightly golden colour and have started to turn crispy on top. They might still be a little soft on top as they’ll continue cooking when they’re out of the oven.
Remove them from the oven and leave them to cool for a few minutes before putting them on a wire rack to cool completely.
