These muffins use our favourite, easy banana bread recipe and turns them into a delicious single portion treat.
Like any kind of banana bread, they are a great way of using up left over bananas – something we’ve got no shortage of in our house.
How can kids help make these banana bread muffins?
This banana muffin recipe is so easy, it’s great for kids who want to bake. You simply measure everything out and mix it all together in one bowl.
Your kids can practice cracking eggs, measuring, and mixing. Young kids can also help by getting the bananas ready. Even toddlers can help peel, chop and mash the bananas.
And if you’ve got an ice-cream scoop your kids can even measure the batter out into the muffin cases without making too much mess!
How do you store banana muffins?
These banana muffins will keep for a few days in an airtight container. If you want to keep them for longer, you can freeze them for a few months. Simply wrap them individually in cling film then pop them in a freezer bag.
Make sure you defrost them fully before you eat them. You might also want to reheat them on a low heat in the oven before you serve them.
How ripe should the bananas be?
Bananas become sweeter as they ripen which means baking things like these muffins is the perfect way of using up over ripe or even brown bananas.
You can also freeze over ripe bananas to use at a later date. If you want to do this, wrap the peeled banana in cling film and pop them in the freezer. When you want to use them take them out the freezer and let them defrost fully – they come out a bit soggy but are perfect for baking with.

Are banana muffins bad for you?
You might think that because they’re stuffed full of bananas they’ll be good for you, and while there may be worse bakes you could have, these are still full of fat and sugar so can by no means considered healthy.

Ingredients
100g (½ cup) butter, softened
175g (¾ cup) caster sugar
2 eggs
225g (1 ½ cup) self raising flour
1 tsp baking powder
½ tsp cinnamon
2 bananas
How to make banana bread muffins
Preheat your oven to 190C / 170C Fan / 375F and line a muffin tin with cases.
Mix all the banana bread muffin ingredients together
Get your kids to measure out all the ingredients into a small bowl (except the bananas) before adding them to a large mixing bowl or freestanding mixer.
You can either use a baking spread like we did here or butter. I find the butter easier to measure out, but you need to make sure it’s soft enough to mix. Either take it out the fridge half an hour or so before you start or pop it in the microwave for a few seconds.
When you are cracking the eggs, do them in a small bowl first, just to make sure no shell gets in. If it does, use a larger piece of shell or a teaspoon to fish it out.
When your kids add the baking powder and cinnamon make sure they use their finger to level the teaspoon so that you add just the right amount.
Mix everything together with a the k-paddle of your free-standing mixer, a hand held mixer or wooden spoons until everything is well mixed and the batter is nice and smooth,
Add the bananas
Preparing the bananas is a great job for little kids. They should be able to peel, chop and mash the bananas before adding them to your mixing bowl.
Add the bananas to your mixing bowl and mix them in with a spatula or wooden spoon.
Make the muffins
Divide the banana muffin batter out among your muffin cases. If you’ve got one, the easiest way to get the banana muffin mixture into your cases is to use an ice-cream scoop. It measures out the perfect amount and makes a lot less mess than regular spoons which is great when you’re baking with kids. If you don’t have an ice cream scoop, just use soup or dessert spoons.
Bake the banana bread muffins
Pop your banana muffins in the oven for 20-25 minutes. They’re ready when they’ve turned golden and a skewer or sharp knife put in the middle comes out clean.
Remove the muffins from the oven and leave them to cool for a few minutes before removing them from the tin and leaving them to cool completely on a wire rack.
Serve and enjoy!

I’m not sure I would agree that this recipe isn’t healthy, it has bananas & raisins in it! Great recipe, to make it more healthy I would omit the sugar altogether (I find bananas and raisins are so sweet already) add only half the fat and add milk/natural yoghurt to make up the deficit. I add coconut oil, not butter.
