Banana and Nutella muffins
Time:30 minutes plus 20 minutes baking
230g (1 3/4 cups) self raising flour
150g (3/4 cup) granulated white sugar
1/2 tsp salt
2 large free range eggs, lightly beaten
113g (1/2 cup) melted unsalted butter
3 large very ripe bananas, mashed
1 tsp vanilla extract
4 tbsp Nutella
As you may know if you’ve read other recipes on this site you’ll know that we regularly have a few over ripe bananas just asking to be baked into something delicious. This week, I wanted to try something new, rather than just making banana bread again (which is what we normally do). I’ve seen a few recipes that combine banana and Nutella and just couldn’t resist, so decided to try these banana and Nutella muffins. They were as good as you might imagine (although they’re certainly not the prettiest thing we’ve ever made). The only problem is now that I’ve introduced Nutella to Hannah and Lewis there’s no going back – they are both newly converted fans and can’t get enough of the stuff!
Preheat your oven to 180C / 170C Fan / 350F and line a 12 hold muffin tin with paper liners
Mix the dry ingredients
Get your little chef to help you measure the flour (230g), sugar (150g) and salt (1/2 tsp) into a large mixing bowl and give it all a stir.
Mix the wet ingredients
Crack the eggs into a separate mixing bowl. Measure the butter in a small bowl and melt it in the microwave (or on the hob). Add it to the eggs along with the vanilla extract (1 tsp).
Get your little one to peel and mash the bananas (this is a great step for little ones to help with!) before adding to your eggs and butter mixture.
Mix everything together
Pour the flour mixture into your banana mixture and gently fold together. It doesn’t have to be too thoroughly mixed – it should still be a little lumpy.
Make the banana and Nutella muffins
Spoon the mixture into your cases until they are a little over half full.
Spoon some Nutella into a small bowl and pop it in the microwave for 10 seconds or so just to loosen it a bit and make it easier to mix into the muffins.
Use a teaspoon to add a little Nutella on to the centre of each muffin then swirl the the Nutella into the muffin using a skewer or cocktail stick.
Bake the muffins
Pop the muffins into the oven for 20-25 minutes. They’re ready when a skewer or sharp knife put into the centre of the muffin comes out clean.
Leave to cool in the muffin tray for 5 minutes then remove and place a cooling rack.
