One of the best things about this white chocolate rocky road recipe is that you can add whatever you like to it, so you can personalise it to you and your kids’ own taste or for a special occasion. If you don’t like marshmallows, for example, you can leave them out, or if you like nuts, add some in (pistachios would work well!)
How can kids help to make a white chocolate rocky road?
Rocky road, as a no bake recipe, is a great easy ‘bake’ for kids. It’s a very simple recipe and younger kids can help with most of the steps (older should be able to do the whole thing themselves.)
Kids can help get all the fillings ready – they’ll be able to measure them out break up the biscuits as well as cutting the marshmallows in half.
Once you’ve melted the white chocolate (a step older children can do) younger children can help mix everything together. It’s really just as simple as that.
What can you put in your rocky road?
Rocky road is a really versatile recipe and I love adding in a mixture of flavours and textures. I think biscuits are a must as they give you some great texture, but you can use any plain ones you have lying around. Once you’ve got your biscuits in, marshmallows are perfect for their softness, and cranberries or other dried fruit add some lovely chewiness. If you love nuts, you could also add some of those in for an extra crunch. Pistachios would work well in this particular version of white chocolate rocky road.
This recipe can also be easily adapted to suit different holidays seasons. If you add some small Easter or Mini eggs you can have an Easter rocky road, or swap in some Halloween candy for a spooky white chocolate rocky road. You also don’t need to change much to make this perfect for the festive season – try adding some pistachios instead of the biscuits and add some Christmas sprinkles on top.
In face, you can experiment with different fillings as long as you add roughly the same quantity (about 200g in total).
How do you stop the marshmallows from melting when you add the white chocolate?
We always pop our marshmallows in the freezer for half an hour or so before we make rocky road. It also helps to add the melted chocolate to the rest of the dry ingredients first before then adding the marshmallows in. We find this helps to stop them from melting as you add the hot chocolate.
Both of these steps are even more important if you are using mini marshmallows.
What biscuits can I use?
You can use any plain biscuit you like. We used Digestive biscuits because we had them in the house but if you’re in the UK you could swap them for Nice biscuits, Rich Teas or even Custard Creams, If you’re in the USA a Graham cracker would work equally well.
How long does white chocolate rocky road keep?
This white chocolate rocky road will keep in an air tight container at room temperature for a few weeks (if it lasts that long!)
Can I freeze white chocolate rocky road?
Yes. You can freeze rocky road for up to a month. You can either wrap each individual piece of rocky road well in cling film or foil and put them in a freezer bag or wrap the whole block of rocky road as one.

Ingredients
400g white chocolate
150g marshmallows/mini marshmallows
75g cranberries
75-100g plain biscuits
- You can swap the rocky road fillings for your own choice of an equivalent amount (approx 200g) of marshmallows/dried fruit/nuts/biscuits.
How to make white chocolate rocky road
Put the marshmallows in the freezer at least half and hour before you start making the white chocolate rocky road.
Line the base and sides of an 8 inch (20cm) square baking tin with baking paper. Leave a strip overhanging the edges to make it easier to remove the rocky road later.
Mix the dry ingredients together
Get your kids to measure out the biscuits and put them in a large mixing bowl. Give them something like a rolling pin and get them to bash the biscuits into small chunks or simply crush them up with your hands.
You want to make sure you end up with some larger biscuit pieces among the smaller crumbs so that your rocky road still has some bite and texture.
Measure the cranberries our and pop them in the mixing bowl with the biscuits. Mix them together.
Remove the marshmallows from your freezer and get your kids to cut them into halves/quarters with some kitchen scissors. Don’t add them to your mixing bowl and set them aside for now.
Melt the white chocolate
Get your kids to help break up the chocolate then add that to a heatproof bowl set over a pan of simmering water (a bain-marie). Make sure the base of the bowl isn’t touching the water.
Melt the chocolate a low heat, stirring all the time until the chocolate is fully melted and smooth. If your kids are old enough to be trusted around a cooker, they can do this step.
Make the white chocolate rocky road
Pour the melted white chocolate into the bowl with the dry ingredients.

Make sure everything is well distributed and everything is well coated in the chocolate.
Tip the white chocolate rocky road mixture into your prepared baking tin. Press it down and into all four corners with the back of a spoon/spatula.
Leave the rocky road to set somewhere cool or in your fridge for a few hours.
Once its set, remove the white chocolate rocky road from the tin and cut it into squares.
Serve and enjoy.
