Method
- Put the marshmallows in the freezer at least half and hour before you start making the white chocolate rocky road.
- Line the base and sides of an 8 inch (20cm) square baking tin with baking paper. Leave a strip overhanging the edges to make it easier to remove the rocky road later.
Mix the dry ingredients together
- Measure out the biscuits and put them in a large mixing bowl. Using something like a rolling pin bash the biscuits into small chunks or simply crush them up with your hands. You want to make sure you end up with some larger biscuit pieces among the smaller crumbs so that your rocky road still has some bite and texture.
- Measure the cranberries our and pop them in the mixing bowl with the biscuits. Mix them together.
- Remove the marshmallows from your freezer and cut them into halves/quarters with some kitchen scissors. Don't add them to your mixing bowl and set them aside for now.
Melt the white chocolate
- Break up the chocolate then add that to a heatproof bowl set over a pan of simmering water (a bain-marie). Make sure the base of the bowl isn't touching the water.Melt the chocolate a low heat, stirring all the time until the chocolate is fully melted and smooth.
Make the white chocolate rocky road
- Pour the melted white chocolate into the bowl with the dry ingredients. Start to stir everything together then, once the white chocolate has cooled a touch, add the marshmallows and give it one final stir. Make sure everything is well distributed and everything is well coated in the chocolate.
- Tip the white chocolate rocky road mixture into your prepared baking tin. Press it down and into all four corners with the back of a spoon/spatula.Leave the rocky road to set somewhere cool or in your fridge for a few hours.
- Once its set, remove the white chocolate rocky road from the tin and cut it into squares. Serve and enjoy.
