James got a mug cake mug for his birthday and was eager to try it out. The kids didn’t think it was fair though that they didn’t get one, so we let each of them choose one to make as well. Unsurprisingly, Lewis wanted to make a chocolate one and Hannah chose this vanilla and strawberry mug cake.

They’re such a simple and quick idea, I was intrigued as to how they would turn out. They’re definitely not as tasty as a properly baked cake, but for something you can whip up in a few minutes, they’re great. Using tsp and tbsp to measure the ingredients rather than scales made them extra simple for the kids to do on their own. They both really loved being able to make the whole thing for themselves.

I also like that they come in really small portions, so they’re fun to experiment with without having a lot of cake left over. It’s easy to add different fillings to get different flavours. From chocolate, to peanut butter or raspberries, there are loads of different options.

Ingredients

4 tbsp flour
3 tbsp caster sugar
½ tsp baking powder
3 tbsp milk
1 tbsp oil
1 tsp vanilla extract
2 strawberries, diced
1 strawberry, for topping, optional

Method

Mix all the ingredients together in a large mug (around 375ml)

Get your kids to measure the flour (4 tbsp), sugar (3 tbsp), baking powder (½ tsp) milk (3 tbsp), oil 1 (tbsp), vanilla extract (1 tsp). Make sure to level each tablespoon or teaspoon so that you get accurate measurements of everything.

Give your child a knife (a blunt table knife should work), and get them to chop the strawberries into small pieces. Add these to your mug.

Mix everything together carefully with a teaspoon. Make sure it’s properly mixed – including all the bits at the bottom of the mug.

Cook the strawberry mug cake

Pop your mug in the microwave and cook it on full power for 90 seconds – 2 minutes. Keep an eye on it to make sure it doesn’t spill over, especially if you’re using a smaller mug.

It’s ready when the sponge is nice and light and fluffy.

Remove the strawberry mug cake from your microwave and leave to cool for a minute or so before adding a strawberry on top.

Serve and enjoy!
