Mint choc chip is a favourite ice cream flavour in our house. We won’t stop for an ice cream when we’re out if we’re not certain they have it as an option. So we’re really happy to now have this easy recipe which means we can make it at home.
It’s a no churn ice cream, with no eggs, which makes it a really easy recipe so it’s perfect for kids who want to get busy in the kitchen in the summer.
How can kids help to make mint choc chip ice cream?
This is a really easy ice cream recipe so it’s perfect for kids who want to make something in the summer.
The ice cream itself is a simple mix of whipped cream and condensed milk so your kids can help measure, whip and mix that all together. There’s no need to separate eggs or make a custard so it couldn’t be simpler.
Once you’ve made the base ice cream, your kids can help prepare the chocolate, and add the colouring and mint flavour before stirring them through. It’s all really very simple, so there’s nothing even young children can’t help with.
How long does homemade ice cream keep?
This ice cream will keep in the freezer for a few months. It will keep better for longer if you make it in an old ice cream tub or tupperware with a lid. If you plan to serve it shortly after making it you can make it in a loaf tin and cover it with cling film / glad wrap.

How to make mint choc chip ice cream
Whip the cream
Get your kids to measure out the cream and pour it into a free-standing mixer or a large mixing bowl. This was easy for us as ours came in exactly the right sized carton but if you need to measure it out, the easiest way to do it accurately is to use the ml setting on some digital scales if you have them.
Whip the cream using the whisk attachment of your free-standing mixer or an electric or hand held whisk, until it is smooth and has formed ‘soft peaks’. Soft peaks is when the mixture is thick enough to hold very briefly when you lift the whisk out before flopping down again.
Try not to over whisk it, but if you do, you could add any spare cream you have or even some milk to loosen it. If it’s over whisked the texture of the ice cream won’t be so nice and smooth and creamy.
Add the condensed milk and mint extract
Measure out the condensed milk and mint extract and add that to your mixing bowl. Add a few drops of green food colouring at the same time.
If your kids are still quite young, they might need some help measuring the mint. You could hold the teaspoon while they pour in the mint extract, or vice versa.
Gently stir them in, until they are well combined. Taste the mixture, and add more mint extract if you like. (All brands of mint extract are a little bit different so it’s best to add a little, then taste, and add some more until it tastes as minty as you like.)
Add the chocolate
Grate or cut the chocolate into small pieces. Older children might be able to help do this, but be very careful of their fingers.
Add it to you bowl and stir it in.
Freeze the mint choc chip ice cream
Pour the ice cream into a 2lb loaf tin, or other baking tin and spread it out with the back of a spoon or spatula. Pop it in the freezer for four hours or overnight until it has set.
Remove the ice cream from the freezer about half and hour before you want to serve it. Serve and enjoy!
