Eton Mess ice cream is a delicious creamy, really easy dessert. Inspired by the traditional summer dessert Eton Mess, it’s full of fresh strawberries and crushed meringues.
It’s a no churn ice cream, with no eggs, which makes it a really easy recipe so it’s perfect for kids who want to get busy in the kitchen in the summer.

This is a really easy ice cream recipe so it’s perfect for kids who want to make something in the summer.
The ice cream itself is a simple mix of whipped cream and condensed milk so you kids can help measure, whip and mix that all together.
Once you’ve made the base ice cream, your kids can help prepare the strawberries, and break up the meringue nests before stirring them through. It’s all really very simple, so there’s nothing even young children can’t help with.
What is Eton Mess?
Eton Mess is a popular summer dessert in the UK. It contains fresh fruit, often strawberries, crushed meringue and whipped cream.
How long does Eton mess ice cream keep?
This ice cream will keep in the freezer for a few months. It will keep better for longer if you make it in an old ice cream tub or tupperware with a lid. If you plan to serve it shortly after making it you can make it in a loaf tin and cover it with cling film / glad wrap.
How long does it take to set?
The ice cream will take at least 4-6 hours to set fully. I prefer to make it the day ahead and leave it overnight.
What berries should you use?
We used strawberries, like the traditional desserts, but you could use a a mixture of raspberries, blueberries, strawberries or any other berries. Use whatever you can get your hands on or whatever your favourite berries are.
Do I need to macerate the strawberries?
Macerating the strawberries really helps to bring out their flavour and makes them more delicious, but the ice cream will still be lovely if you leave out this step and just chop the strawberries and add them as they are.

Ingredients
For the ice cream
600g double or whipping cream
200g sweetened condensed milk
1 teaspoon vanilla extract
For the strawberries
400g strawberries
50g caster sugar
Juice of half a lemon
50g meringue nests (we used 4 pre bought nests)
How to make Eton mess ice cream
Whip the cream
Get your kids to measure out the cream and pour it into a large mixing bowl or free-standing mixer. This was easy for us as ours came in exactly the right sized carton but if you need to measure the cream out, the easiest way to do it accurately is to use the ml setting on some digital scales if you have them.
Whip the cream using the whisk attachment of your free-standing mixer or a hand held whisk, until it is smooth and has formed ‘soft peaks’. Soft peaks is when the mixture is thick enough to hold very briefly when you lift the whisk out before flopping down again.
Add the condensed milk and vanilla
Measure out the condensed milk and vanilla and add that to your mixing bowl. If your kids are still quite young, they might need some help measuring the vanilla. You could hold the spoon while they pour or vice versa. Older children should manage that themselves.
Gently stir them in, until they are well combined.
Freeze the ice cream
Pour the ice cream into a 2lb loaf tin, or other similar sized baking tin. Using a spatula or the back of a spoon, smooth it down into the corners and level the top. Pop it in the freezer for an hour or two until it has partially frozen.
Prepare the strawberries
Remove the stems and hulls and get your kids to chop them into smaller pieces. This is a good job for kids, as you can use a blunt knife and don’t need to be too accurate. It doesn’t matter if some strawberry pieces end up larger than others.
Put the strawberries in a small bowl and add the lemon juice and sugar. Stir it in then leave it for at least half an hour to macerate.
Add the strawberries and meringue to make the Eton Mess ice cream
Get your kids to break the meringue nests up into smaller pieces with their hands. Again, this is a really easy and fun job for kids of all ages.
Remove the ice cream from the freezer and add the strawberries and meringue pieces. Stir them in so they are well distributed among the ice cream.
Pop the Eton Mess ice cream back in the freezer for another few hours at least, or, if you can, overnight to set fully.
Remove the ice cream from the freezer about half and hour before you want to serve it. Serve and enjoy!

ADD THE CONDENSED MILK AND VANILLA
- Measure out the condensed milk and vanilla and add them to your mixing bowl. Gently stir them in, until they are well combined.
FREEZE THE ICE CREAM
