Doffins (doughnut muffins)
What do you get when you cross a doughnut and a muffin? doffins (duffins) or doughnut muffins of course! They’re crisp on the outside, soft on the inside and utterly delicious.
Doffins (doughnut muffins) are a deliciously soft and light muffin with a crispy outside, coated in sugar that’s reminiscent of a doughnut. If you like you can fill them with jam or chocolate for an even greater treat.
Doughnut muffins are great if you want to make doughnuts at home b ut don’t have a doughnut pan. If you’ve got a muffin tin or even a mini muffin tin and a mixing bowl that’s all you need.
How can kids help make the doffins?
This recipe for doughnut muffins is really easy so it’s great for kids. They can help measure and mix all the ingredients together, like most baking recipes.
As these are baked in a muffin tin, your kids can also help fill that with the mixture. Unlike some cake batters, it’s not very runny so it’s not too messy if your kids want to do it.
Finally, your kids can help coat the doffuns in sugar. It’s an optional extra, but if you do choose to do it, it’s really easy so a great job for little chefs.
What can you fill doffins with?
These doughnut muffins can be taken to the next level if you fill them with something. We filled half of ours with homeamde strawberry jam and half with Nutella, but you could equally pop in a teaspoon of lemon curd, or a different flavour of jam like our delicious homemade raspberry jam.
If you don’t want to fill your duffins, you can add a teaspoon of cinnamon to your sugar coating for an alternative pop of flavour.

Ingredients
150g caster sugar
220g plain flour
1 tsp bicarbonate of soda
100ml natural yoghurt
2 eggs
1 tsp vanilla
140g butter
For the coating
75g butter
75g granulated sugar
How to make doffins (doughnut muffins)
Preheat your oven to 180C / 160C Fan / 350F and thoroughly grease a 12 hole muffin tin.
Mix the dry ingredients together
Get your kids to measure out the sugar, flour and bicarbonate of soda and put them in a large mixing bowl.
When your kids measure the bicarb, make sure they level the top of the tea spoon with their finger so they add just the right amount.
Mix it all together.
Add the wet ingredients
Get your kids to measure the yoghurt. The easiest way to do this accurately is to use the ml setting on your digital scales if you have them. Or if you have a set of measuring cups, use those and get your kids to spoon the yoghurt in.
Crack the 2 eggs into a small bowl in case any shell goes in then add it to the yoghurt. If you do have any rogue shell go in simply fish it out with a larger piece of shell – shell sticks better to shell than it does your finger.
Add the vanilla extract. If your kids are young and can’t do it on their own let them hold the tea spoon while you pour in the vanilla or vice versa.
Give your kids a fork and get them to whisk it together.
Finally measure the butter, then pop it in the microwave or heat it in a pan on the hob to melt it.
Add the wet ingredients to the dry ingredients
Make a well in the flour then slowly pour the melted butter in. Start to stir it in.
Add the yoghurt/egg mixture then stir it all together. Stir it just enough to mix it in – you don’t want to over work it so don’t worry if there are still a few lumps of flour showing.
Make the doffins
Start by spooning in doffin batter into each hole of the muffin tin. Fill them about ¾ full then get your kids to spoon either jam or chocolate spread into the middle of each doughnut muffin. Finally, to each doffin with the remaining mixture, covering up the fillings.
Bake the doughnut muffins
Bake the doughnut muffins in the oven for 25 minutes. They’re ready when they have risen and turned a lovely golden brown colour.
Remove them from the oven and leave them to cool in the tin for a few minutes. Take each duffin out of the tin. If you need to, put a small palette knife around the edges to make sure they’re not stuck before you remove them.
Add the sugar coating
If you’re coating your doughnut muffins in sugar, weigh out the granulated sugar and put it in a small bowl. Measure the butter, then melt it in a pan or in a small bowl in the microwave.
You can either dip the duffins into the melted butter or use a pastry brush to brush the butter on to each duffin, then roll them in the granulated sugar.
Serve and enjoy.
