Ingredients

  • 150 g caster sugar
  • 220 g plain flour
  • 1 tsp bicarbonate of soda
  • 100 ml natural yoghurt
  • 2 eggs
  • 1 tsp vanilla
  • 140 g butter
  • 75 g butter
  • 75 g granulated sugar

Equipment

  • Digital scales
  • Mixing bowl
  • Measuring cups
  • measuring spoons
  • Muffin tin
  • Wire rack

Method

Preheat your oven to 180C / 160C Fan / 350F and thoroughly grease a 12 hole muffin tin.
    Mix the dry ingredients together
    1. Measure out the sugar, flour and bicarbonate of soda and put them in a large mixing bowl. Mix it all together.
    Mix the wet ingredients together
    1. Measure the yoghurt, then add the two eggs and vanilla. Whisk it together.
    2. Finally measure the butter, then pop it in the microwave or heat it in a pan on the hob to melt it.
Add the wet ingredients to the dry ingredients
    1. Make a well in the flour then slowly pour the melted butter in. Start to stir it in.
    2. Add the yoghurt/egg mixture then stir it all together. Stir it just enough to mix it in – you don't want to over work it so don't worry if there are still a few lumps of flour showing.
    Make the doffins
    1. Spoon doffin batter into each hole of the muffin tin. Fill them about ¾ full then spoon either jam or chocolate spread into the middle of each doughnut muffin. Finally, to each doffin with the remaining mixture, covering up the fillings.
    Bake the doffins
    1. Bake the doughnut muffins in the oven for 25 minutes. They're ready when they have risen and turned a lovely golden brown colour.
    2. Remove them from the oven and leave them to cool in the tin for a few minutes. Take each duffin out of the tin.
    Add the sugar coating
    1. If you're coating your doughnut muffins in sugar, weigh out the granulated sugar and put it in a small bowl. Measure the butter, then melt it in a pan or in a small bowl in the microwave.
    2. Either dip the duffins into the melted butter or use a pastry brush to brush the butter on to each duffin, then roll them in the granulated sugar.
