Chicken and chorizo skewers

Chicken and chorizo skewers are a great super simple dinner. Make with an easy but delicious marinade they’re perfect if you want to make something a bit different on your barbecue. Or you can cook them in the oven for an easy family friendly midweek meal.
How can kids help to make chicken and chorizo skewers?
These kebabs are a lovely simple dinner kids can help to make. From making the marinade to threading the meat and vegetables, kids can help with almost all of it.
If you have young children just be very careful around the raw chicken.
How do you know when chicken skewers are done?
You’ll need to grill or barbecue the skewers for around 20-30 minutes. Exactly how long the chicken takes to cook will depend on how big your chicken pieces are.
If you want to double check whether the chicken is cooked look in the middle of a piece of chicken. If it is still at all pink cook it for a bit longer.
I always grill chicken skewers on a medium heat and turn them throughout so that all the sides have cooked and that the outside doesn’t burn while the inside is still cooking.
What chicken should I use?
We’ve used chicken breasts because I always have some in the house and my kids prefer it. These skewers would work equally well with chicken thighs though. Use about 500g.
What can I serve them with?
These skewers go brilliantly with a salad and some flatbread.
Ingredients
For the marinade
2 garlic cloves
1 tbsp olive oil
1 tsp oregano
2 tsp paprika
1 tbsp lemon juice
1 tsp brown sugar
For the skewers
2 chicken breasts (about 500g)
200g chorizo sausage
1 red pepper
1 red onion
How to make chicken and chorizo skewers
Marinade the chicken and chorizo
Get your kids to measure out all the ingredients for the marinade and put them in a bowl or tupperware.
When you’re measuring out the lemon juice and olive oil, unless your kids are older, you can hold the table spoon while your kids pour it in or vice versa.
Don’t worry too much when you’re adding the herbs and spices, don’t worry about being too accurate. A rough tea spoon will do.
Cut up the chicken and chorizo sausage into chunks and put them into the marinade. Stir it in, so all the chicken is coated, then cover it and pop it in the fridge to marinade for 2 hours or longer. You can leave it overnight if you like.


If you are using wooden skewers soak them in water for half an hour beforehand so they don’t burn when you cook them.
Make the skewers
Get your kids to help peel the onion and then chop that and the pepper into chunks.
Take a skewer and thread some chicken, chorizo and vegetables on to each one. Make sure to use a mixture and not push them too close together.
Put each finished skewer on to a grill while you make the rest.
Cook the skewers
Grill or barbecue the skewers on a medium heat for 20-30 minutes. Turn them a few times throughout to make sure all the sides are cooked.
To test if they’re ready you can check a piece of chicken. The middle should be cooked through, and not be at all pink.
Serve the skewers with salad and flatbread.
