Ingredients

For the marinade
  • 2 garlic cloves
  • 1 tbsp olive oil
  • 1 tsp oregano
  • 2 tsp paprika
  • 1 tbsp lemon juice
  • 1 tsp brown sugar
For the skewers
  • 2 chicken breasts about 500g
  • 200 g chorizo sausage
  • 1 red pepper
  • 1 red onion

Method

Marinade the chicken
  1. Measure out all the ingredients for the marinade and put them in a bowl or tupperware.
  2. Cut up the chicken and chorizo sausage into chunks and put them into the marinade. Stir it in, so all the chicken is coated, then cover it and pop it in the fridge to marinade for 2 hours or longer. You can leave it overnight if you like.
  3. If you are using wooden skewers soak them in water for half an hour beforehand so they don't burn when you cook them.
Make the skewers
  1. Peel the onion and then chop that and the pepper into chunks.
  2. Take a skewer and thread some chicken, chorizo and vegetables on to each one. Make sure to use a mixture and not push them too close together.
Cook the skewers
  1. Grill or barbecue the skewers on a medium heat for 20-30 minutes. Turn them a few times throughout to make sure all the sides are cooked.
  2. To test if they're ready you can check a piece of chicken. The middle should be cooked through, and not be at all pink.
  3. Serve the skewers with salad and flatbread.
