Vanilla bundt cake
This Vanilla bundt cake is a delicious classic bake. Moise and fluffy and topped with an easy vanilla icing, it’s a centrepiece bake that’s a lot easier to make than it looks.
This vanilla bundt cake is a really easy classic bake. It’s deliciously moist cake full of vanilla flavour and topped with a tasty vanilla icing.
Bundt cakes look more spectacular than a regular layered cake but that doesn’t mean they’re any harder to make. Luckily the tin does all the hard work for you. That means this vanilla bundt cake is a great bake for kids to help with.
How can kids help make this lemon bundt cake?
Despite looking a bit more impressive than a regular cake because on the bundt tin, this is actually a very easy recipe for kids to help with. As with baking any cake, they can help to measure and mix all the ingredients out including getting to practice cracking the eggs.
Preparing the bundt tin is one of the most important steps in this and it’s important not to skip this part if you don’t want your cake to stick. So your kids can help to grease and sprinkle in the flour to the bundt tin making sure to get into all the nooks and crannies. If you’ve got younger children, you could keep them occupied with this step while you get on with starting to make the cake.
The best thing about bundt cakes is that the shape of the tin does all the hard work for you so there’s really no need for any special decoeation. We’ve just drizzled over some vanilla icing and added some sprinkles – both jobs your kids will surely excell at!
How long does a vanilla bundt cake keep?
This cake will keep in an air tight container for 2 -3 days. If you want to keep it for longer you can freeze it (un-iced) for up to two-three months. Simply wrap it well in cling film and pop it in a freezer bag. Make sure you defrost it fully at room temperature before you add the decoration and serve it.
What is baking spread / margarine?
Baking spread or baking margarine, (for example, Stork is a well known brand you can easily find UK supermarkets), is just a non-dairy margarine. I like using baking spread in baking as it makes cakes and cupcakes lighter and fluffier than butter, which means it’s a great, cheaper alternative. It’s also often suitable for vegans, although you should always check the label.

Ingredients
For the vanilla bundt cake:
300g caster sugar
300g butter / baking spread
5 large eggs, at room temperature
2 teaspoons vanilla extract
300g plain / all-purpose
2 teaspoons baking powder
splash of milk (2 tablespoons approx)
For the icing:
250g (2 cups) icing sugar / confectioners’ sugar
3-4 tbsp milk
1 teaspoons vanilla extract

Preheat oven to 180C / 170C Fan / 350F
Grease your bundt pan
Get your kids to help you butter a bundt pan, making sure to get in all the nooks and crannies. We normally use some baking/greaseproof paper with a bit of butter or margarine on it and rub it in. You chould also use some melted butter and brush it on. Sprinkle it with flour covering all the surfaces, pour out the excess and set aside.
Cream the butter and sugar
Measure the butter, or baking spread if you’re using it and pop it in a large mixing bowl or the bowl of your free-standing mixer if you have one. If you’re using butter, make sure it is soft enough to mix in before you add it. If you need to – get your kids to cut it into a few peices and pop it into the microwave to soften it, but not so long that it melts. Baking spread is already soft enough so you can add it straight in.
Get your kids to measure the sugar and add it into your mixing bowl.
Using the k-paddle of your free-standing mixer, a hand held mixer or even wooden spoons, beat the butter and sugar together until the mixture is nice and fluffy and combined.
Add the eggs and vanilla
Crack the eggs one at a time into a small bowl. We never add eggs straight into the mixing bowl just in case any shell goes in. If (or when) it does we simply fish it out with a larger piece of shell or a teaspoon.
Add the eggs into your mixture one at a time, beating well in between each addition. Once you’ve added all the eggs the mixture will be a little bit sloppy.
Add the vanilla extract. If you have younger children, you might need to hold the teaspoon still while your kids pour in the vanilla or vice versa.
Add the dry ingredients
Get your kids to measure out the flour and it to your mixing bowl. Add the baking powder, making your your kids use their finger to level the teaspoon before adding it so that you add just the right amount.
Add a splash of milk (around 2 tablespoons), then beat the mixture until it becomes a nice and smooth batter.
Bake the vanilla bundt cake
Pour or spoon the batter into your prepared bundt tin. Bake for 40-45 minutes.

It’s ready when it has turned a nice golden colour and a toothpick, skewer or sharp knife inserted into the centre comes out clean.
Remove from the oven and leave it to cool in the tin for 10-15 minutes. Once the tin has cooled a little, gently run a knife or spatula around the outside to loosen the cake from the pan.
Turn it out onto a wire rack (we held the wire rack on top of the tin then turned it all upside down), and leave the cake to cool completely. Don’t worry if a few bits stick to the pan, you can arrange them back on top of the cake and cover it with icing later!
Make the icing
In a small bowl or measuring cup, measure out the icing sugar. Add a few tablespoons of milk and the vanilla extract. Mix until it is all combined. Add another spoon of milk and keep stirring. Keep adding the milk a dribble at a time until the thin enough to pour but thick enough to hold its shape. If it’s too thin, add a little more icing until you have a good consistency.
Decorate your vanilla sprinkles cake
Pour or spoon the icing over the top of the cooled cake letting it drip down the sides, and then add sprinkles. I’d put them in small bowls to make it easier for the kids to then sprinkle nicely on top.
Leave the icing to set, serve and enjoy!

- Measure the butter/baking margarine and sugar. Add them to a large mixing bowl or freestanding mixer with the paddle attachment fitted.Beat the butter and sugar together for a few minutes until the mixture is well combined and fluffy.
- Crack the eggs one at a time into a small bowl. Add them into your mixture, beating well in between each addition.Add the vanilla extract.
- Measure out the flour, and baking powder and add them to the bowl. Add a splash of milk. Turn the speed of the mixer down and beat everything until you have a nice smooth cake batter.
- Pour the batter into your prepared bundt tin. Bake for 40-45 minutes. It’s ready when it's turned golden brown and a toothpick inserted into the centre comes out clean.
- Remove from the oven to cool. After 5-10 minutes, loosen the cake from the pan with a blunt knife and turn out on to a wire rack to cool completely.
- In a small bowl or measuring cup, measure out the icing sugar. Add a few tablespoons of milk and the vanilla extract. Mix until it is all combined. Add another spoon of milk and keep stirring. Keep adding the milk a dribble at a time until the thin enough to pour but thick enough that it holds its shape. If it’s too thin, add a little more icing until you have a good consistency.
- Pour or spoon the icing over the top of the cooled cake and then add sprinkles. Leave to set.
