These fluffy pancakes are deliciously light and fluffy, not to mention quick easy to make, they’re the perfect breakfast or brunch.
My kids love pancakes at the weekend, and with this simple recipe there’s no need to use pancake mix. Traditional pancakes in the UK are large and thin and served with sugar or lemon juice. These fluffy American style pancakes are a great alternative. They’re a deliciously light and fluffy pancake, which I believe are well worth making from scratch. With only a few ingredients, they’re easy to make and adapt with different flavours, so they’re the perfect pancake recipe for kids to try.
How can kids help make fluffy pancakes?
There are only a few ingredients for these fluffy pancakes so they’re a great recipe for kids and toddlers to help with. My kids always love measuring the ingredients out then whisking in the milk and eggs.
If you have older children, who are safe next to a cooker, you can also let them spoon out the pancake mixture into the pan, and even flip them over. As they’re little pancakes, they’re much easier to flip than with larger crepe style pancakes so it’s a job your kids are sure to enjoy.
How do you make the pancakes light and fluffy?
There are few tips for making light and fluffy pancakes: first make sure your baking powder is still in date. The baking powder is what gives the pancakes their light and fluffy texture so you need that to be at it’s best.
You also want to make sure you mix the pancakes enough to get rid of any bit lumps of flour, but not enough to over whisk it. As soon as it’s a nice smooth batter stop whisking.
Lastly, to give your pancakes the best chance of a nice rise is to let your pancake batter rest for at least 10 minutes (or longer if you can). If you like you can save a bit of time in the morning by making the batter the night before and storing it in the fridge.
Can I add anything to the pancakes?
Fluffy pancakes are much thicker than the traditional pancakes you find in the UK, but that means they’re great for adapting and adding to. Try adding chocolate chips, blueberries, bananas or other soft fruit to the batter when you cook them.
What topping shall I put on the fluffy pancakes?
In our house we love lots of different toppings, but maple or golden syrup are our favourites. If you’re not a syrup fan or don’t have any in your house, why not try some jam or chocolate spread?
Can I make the pancake batter ahead of time?
Yes. If you want to save a bit of time in the morning, you can prepare the batter the night before and store it in the frige. Make sure you give it a good stir before you cook the pancakes the next day.
Can I freeze leftover pancakes?
Yes. These fluffy American style pancakes are really easy to freeze if you have any leftovers. Once cooled, stack them with layers of baking or parchment paper inbetween and pop them in a freezer bag or air tight container. They’ll keep in the freezer for up to 3 months. When you’re ready to serve them reheat them gently on the hob, microwave or toaster.
What’s the best way of keeping the pancakes warm while I cook the rest of the batch?
If your frying pan is a similar size to our you’ll be able to cook 3 or 4 pancakes at a time. So, to keep the pancakes you’ve made warm while you cook the rest of the batch, you can pop them on a baking tray coverend in foil in the oven on a low temperature (100C or 200F). This should keep them warm, but not over cook them.

Ingredients
270g (2 1/8 cup) Self raising flour*
2 tsp baking powder
1 tsp salt
4 tbsp (1/4 cup) caster sugar
350ml (3/4 cup) milk
2 eggs
50g (4 tbsp) butter, melted
- If you don’t have self raising flour, use 2 cup (270g) plain or all purpose flour along with 2 tsp of baking powder.
How to make fluffy pancakes
Add the dry ingredients to a large mixing bowl
Get your kids to weigh out the flour, baking powder, salt and caster sugar and add them to a mixing bowl.
Add the wet ingredients
In a measuring jug, measure out the milk. Use the ml setting of your scale if you have digital scales. Then add the eggs and get your kids to give it a good whisk. Melt the butter and add it to the milk mixture.
Make a well in the centre of your flour and slowly add the milk mixture. Whisk it together until you have a nice smooth batter.
If you have time, let your pancake batter sit for at least 10 minutes before you cook them. This will help them get nice and light and fluffy.
Cook the fluffy pancakes
Heat some oil or butter in a frying pan then ladle a spoon of the pancake batter into the pan. As these pancakes are quite small, you may be able to fit a few pancakes in the pan at a time.
Gently heat them on one side for a minute or two until they start to bubble.
Turn them over, or get your kids to if they are bit older and can be trusted next to the cooker. Once you flip them, cook them again on the other side until they cooked through.
If you want to serve them in one go, pop the cooked ones in the oven to keep warm (although they are best served straight from the pan!)
