Fluffy pancakes

There's no need to buy pancake mix for pancake day as these fluffy pancakes are so easy to make and something kids can enjoy helping with.

Ingredients
  

  • 270 g (2 ⅛ cups) Self raising flour
  • 2 tsp baking powder
  • 1 tsp salt
  • 4 tbsp (¼ cup) caster sugar
  • 350 ml (¾ cup) milk
  • 2 eggs
  • 50 h (4 tbsp) butter melted

Method
 

Add the dry ingredients to a large mixing bowl
  1. Weigh out the flour, baking powder, salt and caster sugar and add them to a mixing bowl.
Add the wet ingredients
  1. In a measuring jug, measure out the milk. Use the ml setting of your scale if you have digital scales. Then add the egg and give it a good whisk. Melt the butter and add it to the milk mixture.
  2. Make a well in the centre of your flour and slowly add the milk mixture. Whisk it together until you have a nice smooth batter.
Cook the fluffy pancakes.
  1. Heat some oil or butter in a frying pan then ladle a spoon of the pancake batter into the pan. As these pancakes are quite small, you may be able to fit a few pancakes in the pan at a time.
  2. Gently heat them on one side for a minute or two until they start to bubble.
  3. Turn them over. Once you flip them, cook them again on the other side until they cooked through.
  4. If you want to serve them in one go, pop the cooked ones in the oven to keep warm (although they are best served straight from the pan!)
