Method
Add the dry ingredients to a large mixing bowl
- Weigh out the flour, baking powder, salt and caster sugar and add them to a mixing bowl.
Add the wet ingredients
- In a measuring jug, measure out the milk. Use the ml setting of your scale if you have digital scales. Then add the egg and give it a good whisk. Melt the butter and add it to the milk mixture.
- Make a well in the centre of your flour and slowly add the milk mixture. Whisk it together until you have a nice smooth batter.
Cook the fluffy pancakes.
- Heat some oil or butter in a frying pan then ladle a spoon of the pancake batter into the pan. As these pancakes are quite small, you may be able to fit a few pancakes in the pan at a time.
- Gently heat them on one side for a minute or two until they start to bubble.
- Turn them over. Once you flip them, cook them again on the other side until they cooked through.
- If you want to serve them in one go, pop the cooked ones in the oven to keep warm (although they are best served straight from the pan!)
