Strawberry flapjacks are a delicious fruity twist on a classic flapjack recipe. They’re a lovely chewy oat bar with bursts of strawberry flavour and as a really simple recipe it’s a great bake for kids.
Flapjacks are a classic bake that we’ve been making for years. Traditionally, they’re just plain oat bars full of sugary sweetness but not much else, so adding the some fruit – in this case strawberries – gives them a fun and tasty twist. With bursts of strawberries giving them lovely flavour as well as colour throughout they’re the perfect treat to serve with an afternoon tea.
How can kids help to make these strawberry flapjacks?
Flapjacks are one of the easiest things to make which makes them a great recipe for kids to try. Unlike cakes and cupcakes, you don’t need to be perfectly accurate with your measurements and it’s really simple to mix everything together.
They’re also a great bake if you don’t have a lot of baking equipment like mixers or digital scales. All you really need is a mixing bowl, baking tray, something to melt the butter in and something to stir it all together with.
This strawberry flapjack recipes is great for kids – they can take charge measuring out all the oats, strawberries and wet ingredients. If you have older children they can also help melt all the wet ingredients together before mixing it all together.
Once you’ve made the flapjack mixture your kids can help to prepare the strawberries and press it all into the tin.
It’s really a very simple recipe kids will love making, (and eating!)
What can I use if I don’t have golden syrup?
If you don’t have any golden syrup you can swap it for an equal amount of honey, corn syrup or maple syrup.
Can I use frozen strawberries?
I’d recommend using fresh strawberries. Frozen strawberries can be a little bit soft and may break down too much once you add them to the flapjacks. If all you have is frozen strawberries, you could still use them. You’ll not have as many chunks of strawberry in your final flapjack but they’ll still give them a lovely flavour.
Should my flapjacks be soft when they come out of the oven?
Yes. The flapjacks are baked when they’ve turned a nice golden brown colour. Don’t worry if they’re still soft though they will harden while they cool.
Should I cut the flapjacks when they’re hot or cold?
It’s much easier to remove the flapjacks from the tin once they have cooled and hardened. They’re still a little bit soft when they come out of the oven so they can fall apart a bit if you try and take them out the tin before they’ve cooled.
If you like, you can score where you plan to cut them while they’re still warm, to make it easier to portion them later.
How do you store strawberry flapjacks?
These strawberry flapjacks will keep in an airtight container for a few days. The fresh fruit in them means they won’t keep much longer than that.
If you do want to store them for longer you can wrap them in individual portions and freeze them for up to a few months.

Ingredients
150g (2/3 cup) butter
125g (1/2 cup) caster sugar
4 tablespoons golden syrup
300g (3 ¼ cups) porridge oats (rolled oats)
100-125g (½ cup) strawberries
How to make strawberry flapjacks
Preheat your oven to 180C/170C Fan/350F
Grease a 7 inch (18cm cm) square baking tin with a little bit of oil or butter then line it with baking or parchment paper.
The easiest way of lining the tin is to measure a strip of baking paper the width of the tin and lay it in in one direction, then do the same the other way. If you’ve greased the base and sides beforehand the baking paper should then stick into your tin nicely.
Melt the wet ingredients
Measure out the butter, sugar and golden syrup. Get your kids to cut the butter into a few pieces and then and pop everything into a small pan.
Heat the pan over a low heat until everything has melted. If you have older children you can trust around a hot pan, they can help stir the butter while it melts.
You could also melt the butter mixture in a microwave. Do it in short short 30 bursts, stirring it in between until everything has melted.
Measure out the porridge oats
While the butter is melting, get your child to measure the porridge oats and add them to a large mixing bowl.
Mix the flapjack ingredients together
Once the butter, sugar and honey has melted, add it to the oats in your mixing bowl. Give your child a spatula or a wooden spoon and get them to stir everything together until all the oats are well coated in the melted butter mixture. Make sure none of the oats are left dry.
Add the strawberries
Measure out the strawberries. You don’t need to be perfectly accurate, around 100-125g or about ½ a cup is perfect.
Cut the leaves and hull out and then get your kids to cut the strawberries into quarters (or more pieces if they are particularly big strawberries.)
Add the strawberries to your flapjack mixture and stir them through so they are well distributed.

Bake the strawberry flapjacks
Help your kids spoon or pour the flapjack mixture into your prepared baking tin.
Press the flapjack mixture down using the back of a metal spoon or spatula press making sure it is level and that the oats are well pressed down into the edges and corners. Metal soup spoons work perfectly for this job as the flapjack mixture doesn’t stick to it as much as something like a wooden spoon.
Bake the strawberry flapjacks for around 20 minutes. They’re ready when they have started to turn a nice golden brown colour. They’ll be a little bit soft when you bring them out of the oven, don’t worry – they’ll harden as they cool.
Remove the flapjacks from the oven and leave them to cool fully in the tin. If you want, you can gently score the top of the flapjacks where you plan to cut them while they’re still a little soft.
Once they’ve cooled down, remove them from the tin, cut them into 16 squares, or if you want larger portions try 8 or 9.
Serve and enjoy.
