Chorizo rice
Chorizo rice is a great family dinner that can be ready in less than half an hour, making it a great midweek meal that even fussy eaters can enjoy.
This chorizo rice dish is one of my kid’s favourite dinners. My youngest, who doesn’t normally like rice much, gobbles this down in no time.
It’s like an easy jambalaya that you can have ready in less than half an hour making it great for a quick mid week meal.
I also like it because the chorizo and rice can live in my larder for a while so I can rustle it up when I don’t have time to go to the shops before dinner.
How can kids help make this chorizo and rice?
There are a few easy things kids can help do when making this take on jambalaya, but there’s probably not too much for very young children.
Kids can help prepare the vegetables – like peeling the onions and garlic. And older children may also be able to chop the chorizo into chunks.
If your children are old enough to be around your hob they can stir all the ingredients in. My daughter loves being given this responsibility as well as adding things into the pan.

Ingredients
1 onion
3 garlic cloves
1 pepper
1 tin chopped tomatoes
1 chorizo sausage (about 225g)
long grain rice (about 250g)
spinach
How to make chorizo rice
Cook the rice
Cook the rice according to the instructions on the packet.
Prepare the vegetables
Get your kids to help peel and chop the onion and garlic and cut the pepper into small pieces.
My youngest is too small to use a sharp knife but he likes to break the pepper into small chunks which I can then chop them more finely.
Prepare the chorizo
Cut the chorizo into small slices. Unless you have older children who can use sharp knives you’re best to do this yourself.
Cook the onions and garlic
Heat your onions in a little oil for a few minutes until they are soft. Add the crushed garlic and cook over a gentle heat for another minute or so. If your children are old enough they can help by stirring them so they don’t over brown.
Add the pepper and the tin of tomatoes.
Get your kids to pour the tin of tomatoes and the pepper stir them in and simmer it for five minutes.
Add the chorizo and stir it in.
Add the rice and spinach
Finally, add the cooked rice and spinach. Stir it in and leave it for a minute or two until the spinach has wilted.
Serve and enjoy.
