  • 2 lb loaf tin
  • Wire rack

Method

Preheat your oven to 180C / 160C Fan / 350F and grease and line a 2 lb loaf tin with baking or greaseproof paper.
Cream the butter and sugars together
    1. Measure out the butter and sugars and add them to a large mixing bowl or free-standing mixer.
If your butter isn't soft, chop it into a few pieces and pop it in the microwave for 10 seconds or so to soften it, but not long enough to melt it so that it will mix in.
    2. Cream the butter and sugars together using hand held mixers, the k-paddle of your free-standing mixer or wooden spoons until they are light and fluffy.
    Add the eggs
    1. Crack the eggs into a small bowl before adding them, one at a time, to your mixing bowl. Mix them in, in between each addition.
    Add the dry ingredients
    1. Measure out the flour and baking powder and add them to your mixing bowl. Make sure you use your finger to level the teaspoon of baking powder before you add it so that you add just the right amount.
    2. Mix the flour in until you have a nice smooth batter
    Prepare the bananas
    1. Peel and chop the bananas then using a fork or potato masher, mash them up. Add the bananas to your mixing bowl.
    2. Mix the bananas into your batter until they it is all well combined.
    Add the chocolate chips
    1. Add the chocolate chips to your banana bread batter, saving some back for sprinkling on top later if you like. Stir them in with a wooden spoon or spatula until they are well mixed through.
Bake the chocolate chip banana bread
    1. Pour the batter into the loaf tin and spread it into each corner with a spatula or the back of a spoon. Add the chocolate chips you saved to the top of the loaf.
    2. Bake the chocolate chip banana bread for 50-60 minutes It's ready when a skewer or sharp knife inserted into the middle comes out clean.
If you find the top of your loaf is browning too much before it is ready, cover it in foil for the last 10 minutes or so while it finishes baking.
    3. Remove the chocolate chip banana bread from the oven and leave it to cool in the tin.
    4. Once it has cooled, turn it out of the tin, serve and enjoy!
