Method
- Start by lining an 8 inch (20cm) square baking tin with baking or parchment paper leaving some overhanging the edges.
Melt the fudge ingredients
- Weigh the chocolate out, break it into pieces and add it to a heatproof bowl.Pour the tin of caramel into the bowl.
- Set the bowl over a pot of simmering water, being sure the bowl doesn't touch the water. Heat the chocolate and caramel gently until it has all melted, come together and there are no lumps.
Add the salt
- Once the fudge is ready, add the salt and stir it through so it is well distributed.
Leave the fudge to set
- Pour the salted caramel fudge mixture into your prepared baking tin. Press it into the edges/corners and smooth the top with a spatula or the back of a metal spoon or palette knife.If you want' sprinkle some more salt over the top of the fudge and press it in gently so it sticks.
- Leave the fudge to set somewhere cool for 4+ hours. You can speed this up a little if you pop it in the fridge once it's cooled down slightly.Once it's set, remove the fudge from the tin and cut it into pieces with a sharp knife (this is a job for grown ups).
