Ingredients
Method
- Preheat your oven to 170C / 160C Fan / 330F and line a muffin tin with paper cupcake cases.
Mix the dry ingredients
- Measure the flour and caster sugar our and add them to a free-standing mixer or large mixing bowl. Add the baking powder and salt.
- Add the butter into the flour and sugar and mix it together using the k paddle of your mixer or a handheld mixer (or your fingers) until you have a sandy/breadcrumb texture.
Add the wet ingredients
- Add the milk, vanilla extract and eggs to your mixing bowl. Give everything a good mix until you have a nice smooth, runny batter.
Bake the cupcakes
- Fill each of your cupcake cases with batter until they are about ¾ full. Bake the cupcakes in the oven for 12-15 minutes. They're ready when they have risen, and turned a nice golden brown colour. You can also check they're cooked using a metal skewer – poke it in the middle and if it comes out clean, they're done.
- Remove the cupcakes from the oven and leave them to cool in their tray for a few minutes. Then take them out and leave them on a wire rack until they are completely cool.
Make the cream cheese frosting.
- Mix the butter together with the cream cheese in a large bowl or free-standing mixer until they are well combined and not lumpy. Add the vanilla extract and a splash of yellow food colouring and mix it in. Measure the icing out then add it to your bowl. Slowly mix it in until it is mixed in fully.
Decorate the Easter chick cupcakes
- Pipe the cream cheese frosting on to the cupcake with a wide nozzle. We did a big spiral at the bottom then smaller ones on top to look like the Easter chicks.
- We then raided our sprinkles box to find some to use as the beak and eyes. We found some small round chocolate sprinkles and some long think red sprinkles to make the beak. Add these to your chicks (depending on the age of your kids, they might need a helping, steady hand for this job.)
