Chocolate chip cookie bar

M&M cookie bars are the perfect bake sale treat kids will love. Soft chewy cookies made into a traybake, they're quick and easy to make, with so need to chill the dough or form individual cookies.

Ingredients
  

  • 200 g (1 cup) butter softened
  • 300 g (1 + ⅔ cups) soft brown sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 350 g (2 + ¾ cup) self raising flour
  • 250g packet of M&Ms (or chocolate chips)

Method
 

Pre-heat your oven to 180C/170C Fan / 325F and line a 20x30cm baking tray with baking paper
    Mix the butter and sugar
    1. Weigh the butter and sugar and add to a large bowl or free standing mixer. Beat them together with an electric mixer or the paddle/k attachment of your mixer until they are light and fluffy.
    Add the eggs and vanilla extract
    1. Add both the eggs and vanilla extract to your mixing bowl and beat them together until everything is combined. .
    Add the flour and chocolate chips or M&Ms
    1. Weigh the flour and it along with half the M&Ms (or chocolate chips) to your cookie batter. Mix everything together using a wooden spoon until it is full mixed.
    Make the cookie bar
    1. Pour the cookie batter into your prepared tin and press it down with the back of a spoon or knife. Decorate the top with the remaining M&Ms or chocolate chips.
    Bake the cookie bar
    1. Bake the cookie bar in the oven for 25-30 minutes. It's ready when the cookie bar has started to turn golden brown and is still a little soft in the middle. Remove it from the oven and leave to cool before slicing it into pieces.
