Method
Prepare the schniztel crumb
- There are three parts to the crumb – flour, egg and breadcrumbs.
- First, make the breadcrumb. We tore up two slices of bread, and whizzed them up in our hand food processor. Put the breadcrumb in a dish ready for dipping.
- Next, crack the egg into another dish and mix it with a fork.
- Finally, spoon some flour into a third dish.
Prepare the chicken
- Wrap your chicken in clingfilm and bash it until it is less than 1/2cm thick. We used a meat tenderizer but you could use a rolling pin or bottle if you don’t have one.
Coat the chicken
- Heat some oil in a frying pan.
- To make it easier, line the three dishes up in the right order with the frying pan at the end.
- Take each piece of chicken and dip it first in the flour cover it and shake off the excess, then coat it in egg before covering in breadcrumbs.
Bake
- Fry the chicken for a few minutes on each side until it is cooked through. You can keep it warm in the oven while you prepare the rest of the meal.
- Serve it with vegetables, or coleslaw.
