Method
- Preheat your oven to 180C / 170C Fan / 350F and line 2 -3 baking trays with baking paper or greaseproof paper.
MIX THE WET INGREDIENTS TOGETHER
- Measure the butter and chop it into small pieces (if it isn’t already soft, blast it in the microwave for a few seconds to make it easier to mix). Or if you're using a baking spread, simply add it straight into a large mixing bowl.Measure out the sugar and add it to your mixing bowl.Add the vanilla extract.
- Mix the sugar and butter together with wooden spoons.
- Peel and mash the bananas with a fork. When they are well mashed add them to your mixing bowl.Give everything a good mix.
ADD THE DRY INGREDIENTS
- Measure the flour and porridge oats out and add them to your mixing bowl.
- Mix everything together with wooden spoons, until it is all thoroughly combined. It will be a fairly wet mixture.
BAKE THE BANANA OAT COOKIES
- Spoon tablespoons of cookie dough onto your baking sheet. Make sure they are spaced out nicely on your baking trays as they’ll spread a little bit when they bake.
- Bake them for approximately 15 minutes. They’re ready when the edges start to go golden. They'll still be very soft when they come out of the oven, but will harden slightly as they cool.
- Remove the cookies from the oven and leave them on the baking trays for a few minutes to cool slightly, before putting them on a wire rack to cool completely.
