Ingredients

  • 150 g (1 cup) plain/all-purpse flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 110 g (1/2 cup) golden caster sugar
  • 110 ml (1/2 scant cup) milk
  • 2 eggs
  • 20g (2 tbsp) butter, unsalted, softened
  • 1 tsp vanilla extract
  • 1 apple
For the coating
  • 1/2 cup granulated sugar
  • 1/2 tsp cinnamon
  • 2 tbsp butter

Method

Preheat your oven to 160C/140C Fan /320F and grease a mini doughnut pan with oil or butter
    Mix the dry ingredients
    1. Measure the flour, baking powder, salt and golden caster sugar into a large mixing bowl.
    Mix the wet ingredients together
    1. In a separate bowl mix the milk, melted butter, eggs and vanilla extract and whisk it all together.
    Mix everything together
    1. Make a well in the flour and slowly pour the milk mixture in. Stir it untill you have a smooth batter.
    Add the apple
    1. Peel, core and grate the apple. Squeeze out the juice then add the apple pulp to the batter. Add around 10ml of the apple juice to the mixture and give everything one final mix.
    Bake the doughnuts
    1. Use a teaspoon to spoon the batter into your tins. Fill them up to around 3/4 full.
    2. Bake the doughnuts for around 8 minutes. They're ready when they've risen and are golden brown.
    3. Remove the doughnuts from the oven and leave in the tin for a few minutes.
    Coat the doughnuts
    1. Melt the butter in the microwave. In a separate bowl measure out the sugar and mix in the cinnamon.
    2. Dip each doughnut in the melted butter then coat in the cinnamon/butter mixture.
    3. Serve and enjoy!
