Easy hocolate cupcakes

A really simple recipe for chocolate cupcakes that any child who wants to try baking will love.

Ingredients

For the chocolate cupcakes

  • 115 g soft margarine/butter
  • 110 g caster sugar
  • 225 g self raising flour
  • 2 large eggs
  • 2 tbsp cocoa powder

For the chocolate buttercream

  • 60 g butter unsalted
  • 30 g cocoa powder
  • 250 g icing sugar
  • 3 tbsp milk

Instructions

Preheat the oven to 180C / 170C Fan /350F and prepare the baking tinGet your toddler to line a muffin tin with paper cases.

  • Add all the ingredients to a mixing bowl. One at a time, get your child to weigh the sugar and flour into a bowl then add in to your large bowl. Weigh the butter, cut into a few pieces before adding to your bowl.
  • Get your child to crack the eggs into a small bowl before adding to your mixture. Spoon the cocoa powder into the mixing bowl.
  • Mix everything together until the mixture is smooth

Bake the chocolate cupcakes

  • Divide the mixture equally between your cases then pop your baking tray in the oven.
  • Bake for 12-15 minutes or until they are cooked and springy to touch. Transfer to a wire rack to and leave to cool.

Make the icing

  • Measure the butter and cocoa powder and add it to a mixer. Beat them together until it’s nice and smooth. Add the icing sugar and start to beat it in really slowly.  Add the 3 tbps of milk so your mixture is less dry and comes together into a smooth buttercream.

Decorate the chocolate cupcakes

  • Fill a piping bag with the chocolate buttercream and pipe some big swirls onto your cooled cupcakes. Add some sprinkles to finish. If you don't have a piping bag, just use a palette knife or butter knife to spread the chocolate buttercream on top and then decorate
