Mint Aero rocky road

No bake rocky road is one of the easiest things you can make with kids. This Mint Aero rocky road is perfect for any mint lovers.

Ingredients

  • 150 g plain biscuits chopped (we used digestives and malted milk)
  • 400 g Milk Chocolate
  • 125 g Golden Syrup
  • 125 g Unsalted Butter
  • 100 g Mini Marshmallows
  • 2 x 100g bags of Mint Aero bubbles
  • 300 g White Chocolate

Instructions

Line an 8 or 9 inch square baking tin with baking paper and set it aside.

    Melt the chocolate, butter and syrup.

    • Break the chocolate into pieces and pop in a heat proof bowl. Add the butter and golden syrup.
    • Melt everything together on a double boiler (put your bowl on top of a saucepan with simmering water). Or you could put it in the microwave and zap it for short intervals until everything has melted.
    • Stir everything together so it is nice a smooth. Be careful not to overheat it.

    Measure the dry ingredients

    • While the butter/chocolate mixture is coming together get started with the dry ingredients.
    • Measure the biscuits into a large bowl (you don’t need to be too precise). Bash them until they are in smallish pieces.
    • Add the mini marshmallows and half the Mint Aero bubbles to your bowl.

    Mix everything together

    • Pour the melted chocolate mixture into your biscuit mixture. Give everything a good mix.
    • Pour into your tin and pat it down with the back of your spoon until it is evenly spread.

    Prepare the topping

    • Break the white chocolate up and pop in a bowl. Melt it in a double boiler or in the microwave. Once it's melted, pour it over the top of your rocky road.
    • Cut the Mint Aero bubbles in rough halves and sprinkle them over the top of your rocky road. If you want, keep some back, melt them into some of your white chocolate and drizzle it over the top.
    • Pop your tray in the fridge to set for a few hours, slice and enjoy!
