  • 230 g (1 3/4 cups) self raising flour
  • 150 g (3/4 cup) granulated white sugar
  • 1/2 tsp salt
  • 2 large free range eggs lightly beaten
  • 113 g (1/2 cup) melted unsalted butter
  • 3 large very ripe bananas mashed
  • 1 tsp vanilla extract
  • 4 tbsp Nutella

Preheat your oven to 180C / 170C Fan / 350F and line a 12 hold muffin tin with paper liners.

    Mix the dry ingredients

    • Measure the flour, sugar and salt into a large mixing bowl and give it all a stir.

    Mix the wet ingredients

    • Crack the eggs into a separate mixing bowl. Measure the butter in a small bowl and melt it in the microwave (or on the hob). Add it to the eggs along with the vanilla extract.
    • Peel and mash the bananas before adding to your eggs and butter mixture.

    Mix everything together

    • Pour the flour mixture into your banana mixture and gently fold together. It doesn’t have to be too thoroughly mixed – it should still be a little lumpy.

    Make the banana Nutella muffins

    • Spoon the mixture into your cases until they are a little over half full.
    • Spoon some Nutella into a small bowl and pop it in the microwave for 10 seconds or so just to loosen it a bit and make it easier to mix into the muffins.
    • Use a teaspoon to add a little Nutella on to the centre of each muffin. Use a skewer or cocktail stick to swirl the Nutella into the muffin.

    Bake the muffins

    • Pop the muffins into the oven for 20-25 minutes. They’re ready when a skewer or sharp knife put into the centre of the muffin comes out clean.
    • Leave to cool in the muffin tray for 5 minutes then remove and place a cooling rack.
