Creamy lemon chicken

A delicious dish of creamy lemon chicken. It's a great family dinner and has enough steps in it for kids to help with and get busy in the kitchen.

  • 2 large chicken breasts
  • 1 tbsp butter
  • 1 red onion diced
  • 2 garlic cloves
  • Zest and juice of 1 lemon
  • 1 tsp thyme
  • 50 ml water
  • 120 ml double cream
  • 85 g baby spinach
  • 2 tbsp parmesan plus extra for serving
  • Pasta


Cook the pasta according to the instructions on the packet.

    Cook the chicken

    • Cut the chicken into small pieces and fry over a medium heat. Once it’s browned on all sides, set aside.

    Chop the onion and garlic

      Prepare the vegetables

      • Peel and chop the onion and garlic. And Zest and juice the lemon. Pop the lemon in the microwave for 10-15 seconds – this will help you get a lot more juice out of it.

      Cook the onion

      • Wipe the pan the chicken was in with a paper towel and add a tablespoon of butter. Fry the onion and garlic for a few minutes until they have softened.

      Add the lemon

      • Add the lemon zest and juice and stir everything together. Add a tsp of thyme.

      Add the liquids

      • Pour in the water and double cream.
      • Add the spinach and leave it in the pan to wilt for a minute or so.
      • Add the cooked chicken back in along with the cooked pasta and parmesan. Give everything one final stir to coat the pasta and chicken in the sauce.
      • Serve the a sprinkle of parmesan.
