  • 2 large fish approx 400g (cod, haddock or other white fish)
  • 150 g 2 cups breadcrumbs
  • 1 egg
  • 4 tbsp flour

Preheat the oven to 180 and line a baking tray with baking/parchment paper.

    Prepare the coating

    • Get three dishes and put the flour in one, whisk the egg in another and add the breadcrumbs to the third.
    • Top tip: if you make too many breadcrumbs pop some in a freezer bag and put them in the freezer until the next time you need some.

    Prepare the fish

    • Make sure there are no bones in your fish then cut them into nice fish finger sizes. We got about 6 ‘fingers’ out of each of our fish.

    Make the fish fingers

    • Take a piece of fish and dip it first into the flour, then the egg and breadcrumbs making sure all the sides are coated.
    • Place it on the prepared baking tray.
    • Repeat this until all the fish are coated.

    Bake the fish fingers

    • Bake the fish fingers in the oven for around 15-20 minutes. They’re ready when the fish is cooked through and the breadcrumb coating has started to brown a little.

An alternative way of doing this is to simply cook them in a frying pan in a little oil for a few minutes on each side until they are cooked through.
