Vegetable fritters

Vegetable fritters a great finger food for babies and toddlers who are weaning and easy enough for young chefs to help make. They are also a great way of introducing different vegetables to kids, especially if you combine them with something they already know and love.

Ingredients

  • 2 small carrots grated
  • Half a pepper diced
  • 100 g sweetcorn
  • 3 spring onions sliced
  • ¼ tsp mustard powder optional

Instructions

Measure out the dry ingredients

  • Measure the flour and mustard powder into a bowl using.

Measure out the wet ingredients

  • Break the 2 eggs into a separate bowl or measuring jug. Add the milk. Whisk it together.
  • Pour the mixture slowly into the flour and stir it ll together.
  • Add the vegetables to your mixture and stir it all together.

Cook your vegetable fritters

  • Heat a little oil in a pan and then dollop your mixture into little fritters. Cook for a few minutes on each side. They’re ready when they’re browned a little on each side.
